A lot of you asked me yesterday how I find the time to do the exercise and make the snacks that I make. I wake up around 6:00 a.m. and do my bible study for about 30 minutes. So about 6:40 I start my workout. We have DVR so I am able to fast forward through commercials so I actually workout for about 1 hr and 10 minutes I would say. Ruthie doesn't usually wake up until 8 a.m. or 8:30 so she is asleep while I'm working out, and Kane usually wakes up about 7:30. So usually with him I pause my show and grab him a muffin and some milk and let him watch a cartoon while I finish up. I don't just love that he is watching tv but I figure one show won't kill him. (if I don't get it in during the morning I do it during nap time)
As far as finding the time to make snacks and stuff. I either have the kids help me (Kane anyway and Ruthie someday) or I do it while they nap. Kane doesn't always go to sleep during nap time, but I do make him lay down for at least 1 hour. He needs the rest and I need the time to do things that need to get done.
As far as my running club. It's only 3 days a week. We run Tues. and Thurs. at 8:00 p.m. and on Saturdays at 6:30 a.m. The training program we are doing only takes 30 minutes so it doesn't take up too much time away from my family. Actually my kids are in bed before I leave for it. (the hubby is home with them) and a few times I have had to take the kids and I just push them in a jogging stroller. If you don't have one- they are a life saver! and the kids enjoy the ride! I always bring them a snack and a drink!
There you have it! For me it was just a matter of making myself get up and out of bed earlier so that I had more time during the day. It was tough for a while but now I just hop up out of bed.
Here is the muffin recipe I make for my kids (I usually double the recipe and then I freeze some of them until we need them- they freeze really good):
Flax Attack Muffins
2 egg whites
2 T. apple sauce
1 tsp. vanilla
1/2 c. pineapple juice
1 1/2 c. rolled oats
1 c. whole wheat flour
1/2 cup flax seed, ground (I grind my flax seed in a coffee grinder)
3/4 c. brown sugar, packed
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. ground cinnamon
1 apple, cored and shredded
1/2 c. crushed pineapple
1/4 c. raisins
1/2 c. carrots shredded
Combine egg whites, applesauce, vanilla, and pineapple juice. Set aside. Measure out the remaining ingredients into another bowl. Gently mix the contents of both bowls until the dry ingredients are just moistened. Do not stir too much or tunnels will develop when the muffins are baked. Bake at 375 for 18-20 minutes until a toothpick inserted in the middle comes out clean.
Enjoy!

I love to exercise, I just need to be better about what I eat. Geez, I would need to lose 20 pounds to be back to my wedding day weight!! I would happily settle for 10 :)
Kasey, these muffins sound great! I will be trying these out- I wonder if I substitute blueberries for the other fruits, would it taste as good? I think I can get my kids to eat them with blueberries.

I am so inspired by you! That is the key..... I just need to get up earlier. That is the hardest part, I am a night owl and love to sleep in, but for about a year now, I have said I need to start training myself to do it. I guess now is the best time to start. Thanks for sharing. ;)
Great recipe, thanks for sharing! I'll have to try them. And I'm glad to see you love your jogging stroller - I ordered one, it should be here Monday so I can get out running with the kids - although I have to say the idea of pushing a 35 lb stroller with 55 lbs of kids in it seems daunting!

I thought of you today when I was working out. I couldn't see how you got it all done. But now it is clear. I should try the getting up early, I could get more done that way. Thanks for the advice.
Oh, I also love the tv as a babysitter while you workout, we do the same thing.

I am going to have to try these muffins. I always have the best of intentions when buying flax seed and I never end up using it. Maybe this will do the trick for me.
